Sometimes inspiration hits in unexpected places.


One day, I stopped by First Watch with my laptop to get some work done and grab a light drink. As I was scrolling through their menu, a drink called Purple Haze caught my attention. It sounded refreshing and unique — made with butterfly pea flower, lavender, lemon, and cane sugar.


It tasted good, but I couldn’t help thinking I could make it cleaner. No processed sugars, just whole ingredients that bring out color and flavor straight from nature.



Reimagining the Purple Haze


Instead of using cane sugar, I turned to honey crisp apples and key lime. When juiced together, they deliver natural sweetness with a balanced tang — close to what cane sugar and lemon create, but without the crash or refined sugar spike.

Rich in antioxidants called anthocyanins, butterfly pea flower supports healthy skin and focus. It helps protect cells from oxidative stress and gives this drink its deep blue color that transforms into vibrant purple when mixed with lime.

Ingredients

  • 5 honey crisp apples (or sugar bee apples)

  • 2 key limes

  • 1 thumb of ginger

  • 1–2 tablespoons butterfly pea flowers

  • 1 teaspoon dried lavender buds



Instructions

Step 1: Prepare your herbal infusion

Add butterfly pea flowers and lavender buds to a 32oz mason jar filled with room-temperature spring water (or distilled water if preferred). Let it sit overnight or for at least two hours. You’ll notice the water turning a blueish-purple hue with a light floral scent. I suggest chilling it in the fridge until you’re ready to use it.


Step 2: Juice your produce

Start with the key limes in your juicer. I use the Kuvings AUTO10 juicer — this helps reduce oxidation when you juice your apples next. Then add the apples and ginger. The mix will come out crisp, bright, and slightly sweet.


Step 3: Combine and watch the magic

You can use half apple-lime-ginger juice and half butterfly pea-lavender tea, or go with two-thirds juice and one-third tea — it all depends on how sweet or subtle you prefer your drink. Play around with the ratios to find your balance.


For an extra touch, add ice cubes before pouring. The lavender tends to rise to the top, creating a beautiful contrast between the purple tea and golden-green juice. Without ice, the colors will instantly fuse.


Step 4: Serve and enjoy

No refined sugar needed. The apples bring just enough sweetness to balance the herbal blend. You can enjoy it over ice, or chilled from the fridge.
