Fermented Mango + Passion Fruit in Fresh Cold-Pressed Apple Juice

I've been experimenting with fermented mango and other fresh fruits in cold-pressed apple juice, and this mango + passion fruit combination has become one of my favorites.


I made a fresh juice base with Honeycrisp apples, key lime and ginger, added ripe mango and passion fruit, and let the mixture develop for about 30 hours. The biggest surprise wasn't just the flavor—it was what happened to the mango's texture


The idea is simple. I make a fresh apple juice with Honeycrisp apples, key lime and ginger, add fresh fruit, and let the flavors develop.


For this batch, I wanted something tropical.


Why Mango + Passion Fruit?

Mango already has the sweetness and soft texture I wanted, but passion fruit was the wild card.


If you’ve had fresh passion fruit, you know its flavor can stand out. It’s tart, tropical and fragrant. I wondered if it would overpower the mango and apple juice.

It didn’t.


After about 30 hours, the mango became soft and almost cloud-like, soaking up the flavors from the passion fruit and apple juice.


The passion fruit came through without taking over. You could still taste the mango, apple, citrus and ginger. It turned into a balanced tropical mix and ended up being my favorite of the three batches I tested.


The Cold-Pressed Apple Juice Base

For the juice, you’ll need:

4 Honeycrisp applesPink Lady apples also work well

1 key lime

1 thumb of fresh ginger


I cold pressed everything using my Kuvings AUTO10.

Mango + Passion Fruit Mix

For the fruit portion, you’ll need:

Fresh ripe mango, cut into chunksFresh passion fruit

Cold-pressed apple, key lime + ginger juice


Add your mango pieces to a clean mason jar, followed by the passion fruit.

Pour in enough fresh cold-pressed juice to cover the fruit while leaving some room at the top of the jar.



For my experiment, I let the mixture sit for about 30 hours.


This is not a universal fermentation time. Temperature, acidity, sanitation, ingredients and other conditions can change how fermentation develops.


What Happened to the Mango?

This was my favorite part.

The mango didn't have the same texture it started with.

It became much softer and almost cloud-like. When I picked up a piece with chopsticks, you could see how delicate it had become.

It also absorbed some of the apple juice and passion fruit flavor.

The result had layers: sweet mango, tart passion fruit, crisp apple, citrus from the key lime and a small kick from the ginger.

The passion fruit was much more subtle than I expected.

That's what made this combination work for me.


Would I Make It Again?

Absolutely. Out of the three batches I made during this experiment, mango + passion fruit took the top spot. The biggest surprise wasn't the flavor alone. It was what happened to the mango's texture.


I'm starting to learn that using the same cold-pressed apple juice base with different fruits can produce a different experience each time.

And that's what keeps me experimenting.
