Jamaican Brown stew using Oyster Mushrooms, Tomatoes, and Peppers
Brown stew chicken was one of my favorite Jamaican cuisine dishes growing up as youth! I knew I had to recreate the dish some how using alkaline ingredients. I reflected on the ingredients my dad used in his recipe and replaced them with the closest alternatives I could find. I am proud to say the results came very close in flavor which my family enjoyed!
Jamaican Style Brown Stew Oyster Mushrooms
Ingredients
1 handful oyster mushrooms
4-5 roma tomatoes
½ yellow onion
⅓ red pepper
⅓ yellow pepper
1 tbsp sea salt
1 tsp basil
1 tsp oregano
1 tbsp sea salt
¼ tsp cayenne
4 twigs of fresh thyme
1 tbsp Avocado Oil
1 cup vegetable broth (preferably homemade)
1 tbsp date syrup
Directions
OPTIONAL: Preheat oven to 275°F. Line baking sheet with parchment paper. Place Oyster Mushrooms on top and set in oven for 30-45 minutes to remove some of the moisture. Set to the side for later.
Dice the roma tomatoes, peppers, and onion. Then add to a medium sized cast iron.
Season using Basil, Oregano, Cayenne, Sea salt, and fresh thyme. Drizzle over avocado oil, then cook in oven at 400 degrees for 10 minutes.
Remove from oven, then set on stove top at medium heat. Add the vegetable broth, allow to reach a rolling boil, then stir in date syrup.
Add in Oyster Mushrooms, cover with lid, then reduce to lowest heat. Allow to simmer for 10 minutes. Enjoy!
Notes and Tips
Pairs well with grains. My favorite pairing for the brown stew oyster mushrooms is fonio! Fluffy cooked fonio soaks up all the flavors so well. Quinoa is another great option. You can do what I did and add chickpeas into the mix! I haven't tried Wild Rice, but it's worth a shot.
Burro Banana on the side. If you are able to find burro banana in your area, allow it to get ripe and fry in an air fryer or cast iron. It's a great alkaline alternative for plantain which would compliment this Jamaican dish well.
Cookware makes a difference! I highly recommend investing in a cast-iron skillet if you haven't already. It helps maintain the quality of your ingredients and doesn't leak any toxic chemicals.
Serves four. This recipe can spread amongst four plates for the household.
